Las Tinajas, which sits opposite the church in front of the central park, is a Liberia tradition. The casados go for less than $4 and include heaping servings of rice, beans, salad, chicken, steak or pork, and sweet fried plantains. It is also a great place to sit and sip a beer or a banana milkshake and watch the people go by. The open air patio brings in cool breezes, a huge relief in the Guanacaste heat.

When temperatures are sweltering, make your way up the main street to the Pizzeria Italiana across the street from the OIJ Judicial building. They offer open air seating or a little-known back room with television where they pump the air conditioning. There is a wide selection of pizzas and pastas, or try the Tico-style plate of the day for less than $5 including your drink.

On the other side of the main street you will find Jaujas, the restaurant recently changed owners and now promotes sushi and international cuisine. The seating is comfy in the open air ambiance with overhead fans. Prices here are a bit steeper than the average restaurant.

Cafe Liberia is a cozy little cafe selling fresh made cappuccinos, coffees and fruit drinks is also open for lunch. Choose between a bagel or panini sandwich on crusty bread, or the soup or salad of the day. The owner is a friendly young Panamanian couple who are also working to get live music performances on the weekend. Sasha Campbell, a well-known R&B singer performed there recently. The quiet music, air conditioning, WiFi and exchangeable book library make you want to stay there all day long.
