A great recipe for Gallo Pinto!

I found a great recipe for the Gallo Pinto breakfast I love so much. Gallo Pinto is the breakfast that we eat in Costa Rica on most mornings. You can expect to see this dish at any restaurant that serves breakfast and in most every hotel! Usually it comes with fresh bread with butter and eggs. Personally I like to get it with fried eggs on both sides so that the are runny but not too much. You generally will eat this with Natilla (Costa Ricas version of sour cream) but for something a little different, try it with ketchup if you are a ketchup fan. I LOVE it that way personally. Its a very filling breakfast and VERY affordable.

2 TBSP canola oil
1 Small or MED onion, chopped finely
2 Minced cloves of Garlic
3 C. cooked white rice
2 C. cooked black beans, drained and rinsed
1 tsp ground cumin
1 tsp ground coriander
1/2 tsp ground ginger
salt & freshly ground black pepper, to taste
fresh cilantro
sliced green onions

*Heat up the oil in a skillet over Med.
*Add the chopped onion and sauté for a few minutes. You want it to be tender and start to brown.
*Add the minced garlic to the onion and brown.
*Stir the spices into onion and garlic mixture.
*Next, add beans and rice.
*Mix the ingredients and cook until heated through.
*Add salt and pepper to taste and serve hot.
*Garnish with some cilantro (leaves and stems)

This dish keeps for a few days in the fridge so if you make a lot, you can just keep it for the next mornings. For something to drink, go for some cafe con leche or my favorite beer, Imperial (Imperial is one of the local beers of Costa Rica :) , but only if you are vacationing! Otherwise I would stick with the coffee or maybe a natural juice :) ) Oddly enough beer and Gallo Pinto mix well with the smell of the ocean and suntan lotion. It really feels like paradise. Enjoy!
